Opening weekend for Main Street Scoops and Sweets exceeded expectations with the shop dishing out 78 gallons of ice cream Saturday and Sunday.
Owners Stacie and Mark Blubaugh had their grand opening Saturday morning. When doors opened at 8 a.m., a line quickly developed inside the store.
The shop was open for 14 hours Saturday, with only a handful of breaks in the line. Business continued Sunday with a line outside the door prior to opening.
“Everybody was so patient, and we were obviously figuring out our mojo there, you know, trying to get a system and keep everything flowing,” Stacie Blubaugh said.“It’s one thing to train and practice, but it’s another thing to then start working as a team to get it out, but everybody was very gracious and it was very fun.”
The outpouring of support from the community made the Blubaughs feel like it was all worth it.
“It just blew me away,” Stacie Blubaugh said. “I was really just blown away by the whole community. The support and encouragement and just the excitement that everybody brought in, we’re very thankful. It just really is rewarding just to feel that support and encouragement from everybody.”
The shop ran out of some of the most popular flavors, with peanut butter cookie dough, caramel chaos and brownie cascade coming out on top.
To celebrate National Eat Ice Cream for Breakfast Day, the shop had four breakfast options, as well as their regular menu. Customers could order a waffle sundae, cereal flurries, Cinnamon Toast Crunch coffee shakes and cinnamon roll sundaes.
The regular menu will rotate through 16 flavors. The first round includes caramel chaos, strawberry, iced latte-da, ultimate Oreo and Superman.
The shop’s baked goods are prepared by the Blubaughs’ daughter, Brooke. She owns Brooke’s Bakery KC, which offers custom orders of cakes, cookies and cupcakes. Previously, her business was exclusively online, but will now be housed in the back of the shop.
Families and community members of all ages chowed down on waffles topped with ice cream, sprinkles, fruit and whipped cream over the weekend.
The Eddings said they wanted to support the local business and celebrate the holiday.
“There’s not much we don’t like about ice cream,” Justin Eddings said. “The waffle and the ice cream were just fantastic.”
Many customers agreed the shop would draw more of the community to Main Street.
Sarah Jones and her son Henry were excited to try the waffle sundae and were glad to see the shop was busy on its first day of business.
“I think it will bring more people downtown because we usually go to Sylas and Maddy’s, so it’ll keep us in Eudora,” Jones said.
“Whoever decided to do it is a genius,” Henry said.
Allie Ramsden came from Olathe to see the shop’s grand opening. Ramsden has known the Blubaughs for years and was excited to see their dreams come to fruition.
“They moved out here and they had this idea and now it’s come to life, so it looks great,” Ramsden said. “It’s amazing. It really came together. The colors, the décor, everything looks great.”
The shop will be open from 3 to 8 p.m. Sundays, 12:30 to 8 p.m. Monday through Thursday and noon to 10 p.m. Fridays and Saturdays.
